1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
¼ teaspoon salt
1 cup milk
1 large egg
2 tablespoons melted butter or oil
1 teaspoon vanilla extract
Directions
Whisk flour, sugar, baking powder, and salt together in a bowl.
In another bowl, whisk milk, egg, melted butter, and vanilla.
Pour wet ingredients into dry ingredients and stir just until combined (batter should be slightly lumpy).
Heat a lightly greased pan or griddle over medium heat.
Pour ¼ cup batter for each pancake onto the pan.
Cook until bubbles form and edges look set, about 2 minutes.
Flip and cook until golden brown, about 1–2 minutes more.
Serve warm with your favorite toppings.
